this ain't no banquet frozen meal.

finding delicious recipes for dinner that we all love is great. the bummer is that i don't get to post new stuff here the morning after a repeat meal. heh.

so last night, i made something different - salisbury steak. this is an entree that i've only ever eaten from a frozen dinner, but i love that crap. pretty simple - just oval-shaped seasoned patties of ground beef, topped with some gravy (i HEART gravy), usually with some sauteed onions and/or mushrooms, and typically served with mashed potatoes.

i googled for directions, and what could be better than one titled "the very best salisbury steak recipe"? heh.

i figured i'd have that fourth serving for lunch today, but as it turns out, i got a phone call as it was simmering on the stove. the teen and the hub had gone out to play tennis, and had scooped up a friend on the way.

"mom, is it okay if she has dinner with us?"

heh. as if i would say no, especially with said friend sitting in the car right next to her.

so when they got home, i
plated the salisbury steak with mashed potatoes and almond green beans, served it up, and took a bite.

yummy! it lived up to its name for sure. if you like meatloaf-y type stuff, you'll dig this. i cut out the ketchup (because i don't really like meatloaf and to me, ground beef + ketchup = yuck), and it was really flavorful and tasty.

i had also made cookies using some "i can't believe it's not butter" - in an effort to cut down on cholesterol and sat fat - and they were pretty good. i prefer a chewier cookie, but the flavor was good and the hub dug 'em. he's the real cookie monster in the house.

tuesday is family night at our local baskin robbins. and since the teen's friend lives right next to one, they stopped for ice cream before dropping her off at home. i'd stayed behind to bathe the bean, but put my order in for their "york peppermint patty" flavor. it's so delish - mint flavored ice cream with chocolate shavings and mini york peppermint patties mixed in.

the teen totally cracked me up when she held her phone up to show me this:

gawd, what am i gonna WEAR?? ;)
